Spinach-artichoke Mini Pizzas

If you love artichoke and spinach you will love these little pizzas. The cream cheese gives it a nice creamy texture. You could make your pizza dough or use store bought and make a large pizza and just add a bit of garlic or garlic butter to suit your taste. Ingredients

  • 4  ounces light cream cheese (softened from pkg.)
  • 2  tablespoons sour cream
  • 34 cup frozen spinach, thawed and squeezed dry with paper towel
  • 12 cup artichoke heart, drained and patted dry with paper towels
  • 1 (10 5/8ounce) box  pillsbury  refrigerated garlic breadsticks
  • 14 cup  freshly grated parmesan cheese (do not use the parmesan you buy in a can)

Directions

  1. Preheat oven to 350 degrees F.
  2. Break up artichokes into small pieces and mix with cream cheese, sour cream, thawed spinach and artichoke hearts until blended.
  3. Unroll dough into 1 large rectangle.
  4. Spread garlic mixture from box evenly over dough.
  5. Separate dough into 10 breadsticks.
  6. Reroll each breadstick, coiling dough into a spiral shape with garlic mixture inside.
  7. Place 2 in apart on ungreased cookie sheet.
  8. Starting at center, press out each coil into 3 1/2 inch round (edges may curl slightly).
  9. Spread cream cheese mixture on top of each round.
  10. Sprinkle with Parmesan cheese.
  11. Bake for 17 to 22 minutes (depending on your oven) until cheese is melted and edges are golden brown.
  12. Remove immediately from cookie sheet and serve warm.
