Spinach and Rice Appetizers

Yields: 24 appetizers
Ingredients
- 1 1⁄2 cups rice (Cooked)
- 1 (10 ounce) package frozen chopped spinach (Cooked and Drained)
- 1⁄2 cup mozzarella cheese (shredded)
- 1⁄3 cup dry breadcrumbs
- 2 eggs (slightly beaten)
- 1⁄4 cup grated parmesan cheese
- 1 teaspoon Dijon mustard
- 1 (1 1/4ounce) package golden onion soup mix
Directions
- Combine all ingredients.
- Shape into 1 inch balls.
- Grease a cookie sheet and place balls on cookie sheet.
- Preheat oven to 375°.
- Bake at 375° for about 20 minutes or till golden brown.
