Spinach and Mushroom Scramble Wrap

Ingredients
- 1 tablespoon butter
- 6 large eggs, lightly beaten
- 1 tablespoon olive oil
- 2 tablespoons diced onions
- 8 ounces sliced mushrooms
- 5 ounces Baby Spinach
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon fresh ground black pepper
- 4 (8 inch) flour tortillas, warmed
- 4 thin slices havarti cheese
Directions
- In a large skillet, melt butter over medium heat.
- Saute eggs until scrambled.
- Set aside and wipe skillet clean.
- In skillet, heat oil over medium heat; saute bell pepper and onion for 3 minutes or until tender.
- Add mushrooms, spinach, salt, and pepper; saute for 4 minutes or until spinach is wilted.
- Place tortillas on a work surface.
- Layer eggs and spinach mixture equally in center of each tortilla.
- Top with cheese.
- Fold both ends over filling then roll up; serve immediately.
