Spinach and Mushroom Cobb

This is a winter favourite. It can be a light dinner, or part of the appetizers for a dinner. A cobb loaf is a round loaf of bread. Use the bread bits and encourage guests to break off bits of the cobb and use it to dip. Show more

Serves: 4-6

Ingredients

  • 1  onion, diced
  • 2  cloves garlic, chopped
  • 300  g mushrooms (any mixture you like, sliced)
  • 300  ml sour cream (lite works fine)
  • 2  cups  Baby Spinach
  • 12 cup  grated cheddar cheese
  •  salt & pepper
  • 1  loaf  cobb round  bread

Directions

  1. Slice the top off the cobb.
  2. Pull out all the soft bread, leaving a shell.
  3. In a frying pan, heat the olive oil over a low heat.
  4. Add the diced onion and garlic and saute gently.
  5. Add the mushrooms and cook until all the liquid evaporates.
  6. Add the sour cream and stir through.
  7. Season with salt and pepper.
  8. Simmer for a few minutes until it thickens slightly.
  9. Add spinach and stir through.
  10. Turn off heat.
  11. Pour the sour cream mixture into the cobb shell.
  12. Top with cheese and"lid".
  13. Tear the soft bready bits into bite size pieces.
  14. Put the cobb on a baking tray surrounded by bread bits.
  15. Bake in a moderate (180C) preheated oven for 10-15 minutes until bread is golden and cheese is melted.
