Spinach and Avocado Salad

Ingredients
Salad
- 10 ounces Baby Spinach
- 1⁄4 cup toasted sesame seeds
- 3 hard-boiled eggs
- 1 small onion, sliced into rings
- 1⁄2 avocado
Dressing
- 1⁄2 avocado
- 2 -3 tablespoons lemon juice
- 1⁄4 cup vegetable oil
- 1⁄2 teaspoon salt
- 1 dash pepper
Directions
- Toast sesame seeds in a skillet stirring constantly till golden brown.
- toss spinach with the sesame seeds 2 of the eggs chopped fine, the onion rings and 1/2 avocado chopped into 1/5 inch pieces.
- blend the dressing
- pour over salad and toss.
- garnish with sliced egg.
