Spicy Vegan Potato Salad

Ingredients
- 5 lbs white wax potatoes, cut into large chunks and boiled
- 1⁄2 cup Italian olive oil
- 1⁄4 cup apple cider vinegar
- 1 lemon, juice of
- 1⁄4 bunch fresh parsley, chopped
- 2 green jalapeno chili peppers, sliced finely
- 1 small onion, finely minced
- 1 garlic clove, finely minced
- 1 teaspoon salt
- 1⁄2 teaspoon ground pepper
Directions
- Combine oil, vinegar, lemon juice, chili, onion, garlic, salt and pepper in a pot. Bring to a boil for 1 minute. Pour over potatoes and chill.
