Spicy Sweet Potatoes

From TOH. I love the idea of combining sweet and spicy.

Ingredients

• 3  large sweet potatoes, peeled and cut into 1 inch cubes
• 2  tablespoons olive oil
• 2  tablespoons brown sugar
• 1  teaspoon chili powder
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon cayenne pepper

Directions

1. In a large resealable plastic bag, toss sweet potatoes and oil.
2. Add remaining ingredients; toss to coat.
3. Transfer to a greased 11 inch baking dish.
4. Bake, uncovered, at 400 for 40-45 minutes or until potatoes are tender, stirring every 15 minutes.
