Spicy Soba Noodles

Ingredients
- 1⁄2 cup soy sauce
- 1⁄2 cup light brown sugar, firmly packed
- 1⁄4 cup tahini
- 2 garlic cloves
- 1⁄2 teaspoon dried red pepper flakes
- 1⁄4 cup sesame oil
- 6 scallions, chopped, including greens
- 1 lb soba noodles (dried)
Directions
- Bring a large kettle of salted water to a boil.
- Meanwhile, prepare the sauce. In a small saucepan heat together the soy sauce, brown sugar, tahini, garlic, and red pepper, whisking until the sugar and tahini melt. Stir in the sesame oil and scallions and keep warm.
- When the water boils at the soba and cook until just tender, about 5 minutes. Drain.
- Toss the noodles with the sauce, serve immediately.
