Spicy Shredded Buffalo Chicken Wrap

I love buffalo wings, but I really don't like the hassle of preparing chicken. I found a can of chicken in the pantry and this is what I came up with. I made a wrap since I wasn't super hungry, but it would make a wonderful quesadilla if you prefer something heavier. La Tortilla Factory low carb wraps are perfect for this, they have lots of fiber and fewer calories than traditional flour or corn tortillas. I always use Frank's Buffalo sauce, but if you can't find it - 1 part Louisiana hot sauce and 1 part margarine works instead. Show more

  2. Open the can of chicken, drain the water, and dump it into the pan.
  3. Simmer for about 10 minutes, using a spatula to "shred" the chicken (just mash it a bit and it will shred nicely).
  4. Add the pepper jack cheese and stir until melted.
  5. Spoon half of the mixture onto each tortilla/wrap, roll it up, and enjoy!
