Spicy Salmon and Egg Salad

Ingredients
- 2 eggs
- 2 ounces salmon, cooked
- 1 tablespoon oil
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1 tablespoon chile, bird, chopped
- 1 tablespoon spring onion, chopped
- 1 tablespoon coriander, chopped
- 1 tablespoon lime juice
- mint leaf
- cherry tomatoes, halved
Directions
- Beat eggs with salt and pepper to taste.
- Heat oil in frying pan and cook eggs as an omelette.
- Cut eggs in long thin strips that look like noodles.
- Flake salmon.
- Combine all ingredients.
