Spicy Rice and Kale

Ingredients
- 2 1⁄4 cups canned low sodium chicken broth or 2 1⁄4 cups low sodium vegetable broth
- 1 1⁄2 teaspoons cajun seasoning (to taste)
- 1 cup uncooked white rice or 1 cup brown rice
- 4 ounces kale, stems and ribs removed, leaves coarsely chopped (about 2 cups packed or 1/2 of a large bunch)
Directions
- Bring broth and Cajun seasoning to a boil in a large heavy saucepan.
- Stir in rice and kale and bring back to a boil.
- Reduce heat to low, cover and cook until rice is tender and the liquid is absorbed, about 20 minutes for white rice and 30 minutes for brown rice.
