Spicy Raisin Quick Bread

  1. Preheat oven to 350 degrees.
  2. Lightly grease an 8 x 4 inch loaf pan.
  3. In a large mixing bowl, whisk together whole wheat pastry flour, oat flour, baking powder, ground allspice, ground cinnamon, and salt.
  4. In a medium mixing bowl, whisk together egg, nonfat milk, light brown sugar, melted butter, and vanilla extract.
  5. Add wet ingredients to dry, and mix until just combined; then gently stir in dark seedless raisins.
  6. Spoon batter into prepared loaf pan, and level the top.
  7. Bake for 45 to 50 minutes, or until a wooden toothpick inserted into the center comes out clean.
  8. Let bread cool in pan for 10 minutes; then remove from pan and transfer to a wire rack to cool completely before serving.
