Spicy Pumpkin Soup

Ingredients
- 1⁄4 cup butter
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1⁄4 teaspoon coriander powder
- 1⁄8 teaspoon red pepper
- 3 cups chicken broth
- 16 ounces canned pumpkin
- 1 cup half-and-half cream
Directions
- Melt butter.
- Add onion and garlic, cooking over medium heat until soft.
- Add seasonings. Cook at Least one minute.
- Add broth and bring to a low boil for 15-20 minutes.
- Add pumpkin and half & half. Boil 5 minutes.
