Spicy Pickled Vegetables

Yields: 2-3 cups
Ingredients
- 1 -2 tom yam broth cubes
- 1 cup vinegar
- 1 cup water
- 1⁄4 cup sugar
- crushed red pepper flakes (to taste)
- 2 -3 cups vegetables, in large slices (carrots, onion, bok choy...)
Directions
- Dissolve cubes in water, then add vinegar, sugar and pepper.
- Add vegetables, put in jar for at least one day (in the frig!)
