Spicy Peach Stir-Fry Sauce

Ingredients

  • 15  ounces  peaches in heavy syrup, drained syrup RESERVED
  • 13 cup soy sauce
  • 14 cup rice vinegar, unseasoned
  • 13 cup light brown sugar
  • 1  tablespoon garlic, minced
  • 2  tablespoons ginger, fresh minced
  • 18 teaspoon  red chili pepper flakes (to taste)

Directions

  1. In a stainless steel saucepan, combine 1/2 cup of RESERVED peach syrup, soy sauce, vinegar, brown sugar, garlic, ginger, and chile pepper flakes and blend well.
  2. Bring mixture to a boil over high heat-stir.
  3. Reduce heat and simmer for 5 minutes.
  4. In a blender, puree peaches and then pour into a bowl.
  5. Remove syrup mixture from heat and stir into the peaches.
  6. Cover and refrigerate.
