Spicy Maple Pumpkin Soup

Ingredients
- 1⁄3 cup quinoa or 1⁄3 cup flour
- 2 1⁄2 teaspoons pumpkin pie spice
- 1⁄4 teaspoon cayenne pepper
- 2 (15 ounce) cans pumpkin puree
- 5 cups chicken broth
- 2 tablespoons maple syrup
- 1 cup buttermilk
Directions
- In a large pot, combine quinoa flakes, spices, pumpkin, broth and maple syrup. Bring to a boil. Reduce heat and simmer for 20 minutes.
- Reduce heat to low and whisk in buttermilk. Simmer for 5 minutes.
