Spicy Cheddar Cheese Spread

Yields: 3 1/2 cups
Ingredients
- 8 ounces chilled sharp cheddar cheese, shredded
- 8 ounces chilled monterey jack cheese, shredded
- 1 medium onion, quartered and shredded
- 1⁄2 cup unsalted butter, cut into pieces (1 stick)
- 2 teaspoons hot pepper sauce (such as Tabasco)
Directions
- Combine all ingredients in large bowl; cover and let stand until cheeses soften, about 1 hour.
- Using electric mixer, beat cheese mixture until fluffy, stopping occasionally to scrape down sides of bowl.
- Spoon cheese into a crock.
- (Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temperature before serving.).
