Spicy Beef Satay Pho

Ingredients
- 4 cups chicken broth
- 5 ounces hoisin sauce
- 2 1⁄2 ounces satay barbecue sauce
- 2 ounces peanuts (crushed)
- 1 ounce lemongrass (chopped small)
- 1⁄2 teaspoon tomato paste
- 1 teaspoon chili oil
- 1 lb beef (sliced thin)
- 1⁄2 English cucumber (chopped)
- 1⁄2 cabbage (chopped)
- 1⁄2 lb bean sprouts
- rice noodles
- green onion (chopped for garnish)
Directions
- Mix and cook the first 7 ingredients.
- Add the beef (or chicken).
- Mix together the cabbage, cucumber and bean sprouts.
- Cook the rice noodles in hot water. Drain.
- Put the cooked noodles on top of the vegetables in individual bowls.
- Pour the soup over top and sprinkle with green onions.
