Spicy Bean Nacho Pie

  1. Heat oil in a frying pan. Fry onion for 5 minutes. Stir in garlic, ground and fresh coriander, cumin, chillies, sugar and tomatoes. Crumble in stock cube.
  2. Stir in beans and simmer for 10 minutes.
  3. Preheat grill to high.
  4. Transfer mixture to an ovenproof dish. Scatter with tortilla chips and cheese. Season to taste with salt and pepper.
  5. Grill until cheese melts.
  6. Serve with sour cream.
