Spicy Banana Pockets (Vegan)

Ingredients
- 1 (12 ounce) package wonton wrappers
- 1 cup mashed banana
- 1⁄4 cup grated coconut
- 1⁄4 cup minced onion
- 2 minced garlic cloves
- 1 tablespoon grated ginger
- 1 tablespoon chili-garlic sauce
- soy sauce and rice vinegar
- 1 teaspoon mint
- 1 teaspoon basil
- 1 teaspoon cilantro
- 1⁄2 teaspoon minced lemongrass
- 1 jalapeno, sliced into rings
- 1 teaspoon sugar
- 1 teaspoon garam masala
- 1 tablespoon peanut oil
- 3 tablespoons shredded carrots
- frying oil
Directions
- Mix all but the wrappers and frying oil together.
- Place a dollop of this stuff on a wrapper, roll it up nice and tight and fry them in oil (doesn't have to be super deep if you turn them!) until browned all about.
- Serve with hoisin or black-bean garlic sauce and some chili sauce.
