Spiced Red Cabbage

Ingredients
- 1⁄2 medium head red cabbage
- 1 tablespoon vegetable oil
- 1 medium onion
- 1 medium tart apple
- 3 tablespoons red wine vinegar
- 1 tablespoon sugar
- 1 bay leaf
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄8 teaspoon ground cloves
Directions
- Bring a large pot of salted water to boil.
- Meanwhile, dice cabbage.
- Boil cabbage for 1 minute, drain and return to pot.
- Chop onion and slice apple.
- Add with remaining ingredients to the pot of cabbage.
- Cover and simmer until cabbage is tender, about 1 hour.
- Remove bay leaf and serve.
