Spiced Prawn and New Potatoes Recipe

Ingredients
- 300 g new potatoes, quartered
- 1 tablespoon olive oil
- 1 red onion, finely chopped
- 1 teaspoon sambal oelek
- 1 pinch cayenne pepper
- 50 ml white wine
- 400 g cherry tomatoes, halved
- 225 g king prawns, raw and peeled
- 2 tablespoons fresh coriander, chopped
Directions
- 1. Cook the potatoes in a pan of boiling salted water for 5 minutes, then drain. Meanwhile, heat the oil in a frying pan and gently fry the onions and spices for 5 minutes.
- 2. Add the wine and reduce by half. Add the tomatoes and potatoes, season and simmer for 10 minutes.
- 3. Add the prawns and bubble for 3-4 minutes until the prawns are cooked. Stir in the coriander and serve.
