Spiced Plum Pork Tenderloins

Got this recipe from an old Pillsbury cookbook.

Serves: 6

Ingredients

  • 2 (1/2lb)  pork tenderloin, approx.,trimmed
  • 2  plums, room temperature,pitted and thinly sliced
  • 14 cup  firmly packed brown sugar
  • 1  teaspoon dry mustard
  • 18 teaspoon  ground thyme
  • 18 teaspoon ground cloves

Directions

  1. Preheat oven to 400 degrees.
  2. Line broiler pan with aluminum foil; spray with cooking spray.
  3. Butterfly tenderloins by cutting lenghtwise slit down center of each, almost to but not through the bottom.
  4. Open the tenderloins so each lies flat; place on spray-coated pan.
  5. Arrange plum slices over tenderloins.
  6. In a small bowl combine brown sugar and remaining ingredients; mix well.
  7. Sprinkle over plum slices.
  8. Bake at 400 degrees for 25-30 minutes or until pork is no longer pink.
