Spiced Asparagus With Chicken

Ingredients
- 2 tablespoons peanut oil
- 400 g chicken tenderloin, cut in half
- 2 medium Spanish onions, peeled and cut into thin wedges
- 1⁄2 teaspoon turmeric
- 2 teaspoons yellow mustard seeds
- 400 g asparagus, cut into 7 cm lengths
- 150 g snow peas
Directions
- Heat wok over high heat, add half of the oil and half of chicken.
- Stir fry 3 minutes till cooked.
- Remove and repeat with remaining chicken.
- Set aside and now heat remaining oil in wok.
- Add onion and fry for a minute.
- Add tumeric, mustard seeds and asparagus and stir fry for 2 minutes.
- Add snow peas and chicken and stir fry 3 - 4 minutes till vegies are tender.
- Serve with pappadams.
