Spiced Apple Damper

A sweet variation on traditional Aussie campfire damper - from Super Food Ideas magazine. The original recipe states to use Pink Lady apples but you could use Royal Gala's, Grannies, or any other that took your fancy. I'm sure you could try other fruit, too. Show more

  1. Preheat oven to 200° Celsius. Lightly dust plain flour over a flat baking tray.
  2. Sift SR flour into a large bowl and stir in brown sugar and mixed spice.
  3. Rub butter into flour mixture using fingertips, until mixture resembles breadcrumbs.
  4. Stir in apple.
  5. Make a well in the centre and add 1 cup of milk. Mix with a flat-bladed knife until mixture forms a soft dough (add more milk if required).
  6. Turn dough onto a lightly floured surface and knead gently until smooth. Don't knead too much or damper will be tough.
  7. Shape dough into a 19cm (7.5 inch) round. Brush top with egg white and sprinkle with demerara sugar.
  8. Place onto prepared tray and bake 30 mins or until golden and cooked through.
  9. Stand on tray for 5 minutes.
  10. Serve with cream cheese and syrup.
