Spiced Apple Damper

Ingredients
- plain flour, for dusting
- 3 cups self-raising flour
- 80 g butter, chilled, cubed
- 1⁄4 cup brown sugar
- 1 1⁄2 teaspoons mixed spice
- 1 -1 1⁄4 cup milk
- 2 small apples, grated
- 1 egg white, lightly beaten
- 1 tablespoon demerara sugar
- cream cheese, to serve
- maple syrup, to serve
Directions
- Preheat oven to 200° Celsius. Lightly dust plain flour over a flat baking tray.
- Sift SR flour into a large bowl and stir in brown sugar and mixed spice.
- Rub butter into flour mixture using fingertips, until mixture resembles breadcrumbs.
- Stir in apple.
- Make a well in the centre and add 1 cup of milk. Mix with a flat-bladed knife until mixture forms a soft dough (add more milk if required).
- Turn dough onto a lightly floured surface and knead gently until smooth. Don't knead too much or damper will be tough.
- Shape dough into a 19cm (7.5 inch) round. Brush top with egg white and sprinkle with demerara sugar.
- Place onto prepared tray and bake 30 mins or until golden and cooked through.
- Stand on tray for 5 minutes.
- Serve with cream cheese and syrup.
