Speedy, Green Rice

Ingredients
- 1 lb fresh spinach, washed and chopped or 1 (10 ounce) package frozen chopped spinach
- 1⁄4 cup butter
- 3 cups instant rice
- 2 1⁄3 cups water
- 2 teaspoons salt
- 1⁄2 teaspoon oregano
- 6 green onions, sliced
- 2 tablespoons parsley, chopped
- 2 tablespoons lemon juice
- 1⁄2 cup parmesan cheese, grated
Directions
- If using fresh spinach, drain well. If using frozen spinach, thaw and drain well.
- In a large pan, saute spinach in butter for 2 to 3 minutes.
- Stir in rice, water, salt and oregano; bring to a boil. Cover and simmer until all liquid is absorbed, about 5 minutes.
- Stir in onion, lemon juice and parsley; heat through.
- Sprinkle with parmesan cheese when serving.
