Special Squash Cornbread

Found in an old cookbook. I am submitting the recipe as I found it. For my reference- I use about 5 (5") squash. Show more

Serves: 8-12

Ingredients

  • 3  yellow squash, grated
  • 4  eggs, beaten
  • 12  ounces cottage cheese
  • 1 (8 1/2ounce) box  Jiffy cornbread mix
  • 12 cup margarine
  •  onion, grated, to taste

Directions

  1. Mix all ingredients and pour into a greased 9 x 13" baking dish.
  2. Bake at 350 degrees for 20 - 35 minutes until firm in the middle.
