Very convenient since this is put together the night before. I add a couple cups of diced ham to the casserole. You can also add crumbled, cooked bacon or some browned sausage. I tried to include this as "optional", but couldn't not get the recipe to publish. Show more

  1. Melt butter in a 9x13" baking dish in oven.
  2. Beat eggs until lemony. Add flour, baking powder, salt, cottage cheese, Monterey jack cheese, chilies and meat and mushrooms (if using). Mix well.
  3. Pour into baking dish and chill overnight/.
  4. Bake at 350 for 35-40 minutes or until knife inserted in the middle tests done.
  5. Cooking and prep times do not include the overnight refrigeration.
