Spanish Rice and Sausage

Ingredients
- 1⁄2 cup chopped green pepper
- 1⁄3 cup chopped celery
- 1⁄4 cup chopped onion
- 1 tablespoon canola oil
- 1 lb fully cooked smoked sausage, sliced
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (6 7/8ounce) package Spanish rice, and pasta mix (or homemade -- see below)
- 1⁄4 cup sliced pimento stuffed olive
- 1⁄8 teaspoon pepper
- 3⁄4 cup rice
- 1 teaspoon salt
- 1 teaspoon minced onion
- 1 tablespoon dried tomato powder (or add 1 can diced tomatoes when cooking rice in chicken broth)
- 1⁄2 teaspoon chili powder
Homemade Spanish Rice
- 1⁄2 cup uncooked spaghetti
- 3⁄4 cup rice
- 1 teaspoon salt
- 1 teaspoon minced onion
- 1⁄2 teaspoon chili powder
- 2 tablespoons butter
Directions
- Saute the green pepper, celery, rice/spaghetti and onion in butter until the veggies are tender.
- Stir in the remaining ingredients. Cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed, stirring occasionally.
