Spanish Rice

Ingredients
- 3 cups cooked white rice (cooked in beef stock)
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 onion, chopped
- 1⁄2 cup chopped mushroom
- 1 stalk celery, cut into small pieces
- 1 cup beef stock
- 2 cups crushed tomatoes
- 4 garlic cloves, minced
- 3 -4 tablespoons sweet chili sauce (to taste)
- 1 dash garlic powder
- 1 dash onion powder
- 3 tablespoons butter
- salt and pepper
Directions
- In a large skillet saute peppers,onion, mushrooms,and celery in butter until softened. Add remaining ingredients and simmer for 20 minute.
- You may need to add more beef stock if rice is too dry.
