Spaghetti With Tomato Carbonara

Ingredients
- 5 slices bacon
- 1 small onion, chopped (1/4 cup)
- 2 tablespoons tomato paste
- 1 lb spaghetti
- 3 large eggs
- 3⁄4 cup parmesan cheese
- 3 tablespoons parsley
Directions
- Bring a salted pot of water to boil.
- Place bacon in cold skillet and cook over medium heat until crisp.
- Remove bacon and add onion to skillet. Cook until soft.
- Add tomato paste and cook for 1 minute.
- Cook the pasta, reserve 1 cup of cooking water.
- Return skillet to low heat.
- Whisk eggs and parmesan in a medium bowl.
- Add the beaten eggs, pasta and half of the cooking water into the skillet.
- Cook, stirring continuously, until the eggs are thickened, about 2 minutes.
- Add bacon, parsley, and more pasta water if needed to coat pasta in sauce.
- Season with salt and pepper to taste.
