Spaghetti With Tomato Carbonara

  1. Bring a salted pot of water to boil.
  2. Place bacon in cold skillet and cook over medium heat until crisp.
  3. Remove bacon and add onion to skillet. Cook until soft.
  4. Add tomato paste and cook for 1 minute.
  5. Cook the pasta, reserve 1 cup of cooking water.
  6. Return skillet to low heat.
  7. Whisk eggs and parmesan in a medium bowl.
  8. Add the beaten eggs, pasta and half of the cooking water into the skillet.
  9. Cook, stirring continuously, until the eggs are thickened, about 2 minutes.
  10. Add bacon, parsley, and more pasta water if needed to coat pasta in sauce.
  11. Season with salt and pepper to taste.
