Spaghetti With Prawns

  1. Cook spaghetti in a large saucepan of salted water, as per directions on packet.
  2. In a large frying pan, over medium-high heat, heat olive oil.
  3. Add garlic and chili. Cook stirring for 30 seconds or until aromatic.
  4. Add prawns and cook for 2 or 3 minutes or until prawns change colour.
  5. Add tomatoes and cook for 1 minute or until tomatoes are tender.
  6. Add wine and chicken stock cube and bring to the boil.
  7. Cook, stirring occasionally for 5 minutes or until sauce thickens.
  8. Drain spaghetti, add the drained spaghetti and chopped parsley to sauce mixture and gently toss to coat.
  9. Season with salt and pepper to desired taste.
  10. Divide spaghetti among serving bowls. Garnish with parsley leaves.
  11. Tip. If sauce mixture becomes too thick, add tablespoons of water from the boiling spaghetti to obtain the desired consistency. The starch in the water also makes the sauce become creamy.
