Spaghetti With Fresh Tomato Sauce

A quick tomato sauce for those nights that you don't have a lot of time to do a lot of cooking -

  1. Skin tomatoes by placing them in boiling water for 1 minute- no longer. Lift out and plunge in ice water. Peel off skins, Chop into 1/4 inch cubes. Mix with the other sauce ingredients in a non-metalic bowl. Cover and let stand for at least 30 minutes.
  2. Cook the pasta in plenty of boiling, salted water. Drain pasta and mix with the sauce. Cover with a lid and leave for 2-3 minutes, toss again and serve immediately.
