Spaghetti Pie

Ingredients
- 6 ounces whole wheat spaghetti
- 1 tablespoon olive oil
- 1⁄3 cup parmesan cheese, grated
- 1 egg, beaten
- 1⁄2 lb ground turkey
- 1⁄2 cup chopped onion
- 1⁄4 cup chopped green pepper
- 1 (8 ounce) can low-sodium stewed tomatoes
- 1 (6 ounce) can low-sodium tomato paste
- 3⁄4 teaspoon dried oregano
- 1⁄2 teaspoon garlic powder
- 1 cup part-skim ricotta cheese
- 1⁄2 cup part-skim mozzarella cheese, shredded
Directions
- Cook pasta according to package directions; drain. Stir oil and Parmesan cheese into hot pasta. Add egg, stirring well. Spoon mixture into a 10 deep dish pie plate. Use a spoon to shape the spaghetti into a pie shell. Microwave uncovered on high for 3 minutes or until set; set aside.
- In Skillet, saute onion for 5 minutes till tender, add ground turkey and cook till done. Drain fat, return to skillet or in a large bowl, add tomatoes, paste, spices. Cover and microwave 3 to 4 minutes, stirring once; set aside.
- Spread ricotta evenly over pie shell. Top with meat sauce. Cover with plastic wrap and microwave on high for 6 minutes. Sprinkle with mozzarella. Microwave uncovered on high for 30 seconds or until cheese melts.
