Soy and Vinegar Marinated Cornish Game Hens

Ingredients
- 2 (1 1/2lb) baking hens, halved, backbones removed
- 1⁄2 cup soy sauce
- 1⁄2 cup cider vinegar
- 1 1⁄2 tablespoons garlic, minced
- 1 1⁄2 tablespoons dried oregano
- 3 bay leaves
- salt, to taste
- pepper, to taste
Directions
- Marinate the hens in the above ingredients in the refrigerator for at least 2 hours to 12 hours.
- Turn hens occasionally.
- Preheat oven to 450 degrees F.
- Arrange hens skin side up in a 13" X 9" baking pan and pour marinade over the hens.
- Bake 20-25 minutes, or until done.
- Discard bay leaves and serve with rice.
