Southwestern Spinach Salad

Ingredients
- 8 slices bacon
- 4 eggs
- 1⁄2 cup picante sauce
- 1⁄4 cup Italian dressing
- 1⁄4 teaspoon cumin
- 1 medium red bell pepper
- 1 small red onion
- 4 cups fresh Baby Spinach
- 1 cup sliced fresh mushrooms
- 1 (15 ounce) can black beans
Directions
- Cook bacon and let cool on paper towels.
- Hard boil, peel, and slice eggs.
- Combine picante sauce, dressing, and cumin.
- Slice pepper and onion.
- Crumble bacon.
- Toss bacon, pepper, onion, spinach, and mushrooms in a salad bowl.
- Rinse and drain black beans, add to salad.
- Drizzle with dressing and toss again.
- Garnish with egg slices.
