Southwestern Soup With Choice of Garnishes

Ingredients
- 2 (14 ounce) cans beef broth
- 1⁄2 cup sliced carrot
- 1⁄2 cup diced onion
- 1 cup diced potato
- 1 garlic clove, minced
- 1 (8 ounce) can crushed tomatoes
- 1 tablespoon Worcestershire sauce
- salsa, to taste
GARNISHES
- shredded cheese
- diced avocado
- diced green pepper
- diced cucumber
- 2 ounces ripe olives
- 1 (6 ounce) can fresh mushrooms, sliced and sauteed in butter
- 1 (6 ounce) can baby shrimp, cooked and peeled
- 1 cup cooked ham, diced
- 1 cup onion, sliced
- 3 hard-boiled eggs, chopped
- 1 cup diced tomato
- sour cream
Directions
- Combine broth, carrots, onions, potatoes, garlic, tomatoes, and worcestershire sauce in a slow cooker.
- Cook on low 6-8 hours.
- Before serving, stir in salsa, sampling as you go to get the right balance of flavors.
- Serve the soup in bowls, and top with your choice of garnishes.
