Southwestern Sloppy Toms

A variation on the ever-popular Sloppy Joe using ground turkey and salsa. Adapted from my grocery store sales circular. Show more

  1. In a large skillet cook turkey and onions over medium heat until turkey is no longer pink and onions are softened. Break up turkey with wooden spoon as it cooks. Drain off any liquid.
  2. Stir in salsa and chilies and heat to simmering. Reduce heat to low and cook 3 to 5 minutes, stirring occasionally.
  3. Meanwhile, heat cornbread and cut in half lengthwise. Spoon turkey atop and form sandwich. Garnish with additional salsa, if desired.
