Southwestern Quinoa Salad

Ingredients
- 1 cup quinoa, uncooked
- 2 cups water
- 1⁄3 cup chopped tomato
- 1⁄2 cup chopped celery
- 1⁄2 cup frozen corn, defrosted
- 1⁄2 cup canned black beans, rinsed and drained
- 1⁄2 cup red onion, thinly sliced
- 1⁄2 cup seedless cucumber, diced
Dressing
- 1 chipotle chile in adobo
- 2 tablespoons light sour cream
- 2 tablespoons fresh lime juice
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 3⁄4 cup fresh cilantro leaves
- 1⁄4 teaspoon salt
Directions
- Cook quinoa according to package directions.
- Spread on a baking sheet to cool.
- Mix cooled quinoa with vegetables and beans.
- Blend dressing ingredients in blender until smooth.
- Mix dressing with quinoa.
- Chill and serve.
