Southwestern Chicken Marinade

This is a great way to prepare chicken for company -- but it's so easy and quick, it's also a perfect entree for "gotta-make-a-quick-dinner" nights!

• Yields: 4 chicken breasts

Ingredients

• 4  chicken breasts

• Marinade

• 1  tablespoon  balsamic vinegar
• 1  tablespoon olive oil
• 2  teaspoons garlic powder or 2  minced garlic cloves
• 1⁄2 teaspoon oregano
• 1  teaspoon paprika
• 1⁄2 teaspoon cumin
•  salt and pepper, to taste

Directions

1. Mix together marinade ingredients.
2. Coat chicken in marinade.
3. (Optional: allow chicken to marinate 1-2 hours. On evenings when I don't have time to let it sit, though, it still tastes good when it goes straight to the grill!).
4. Grill chicken.
