Yields: 4-6 side dish servings

Ingredients

  • 1 (20 ounce) package  Simply Potatoes Diced Potatoes with Onion
  • 1 (15 ounce) can black beans, drained
  • 1  cup frozen corn kernels
  • 1 (10 ounce) container  Philadelphia Santa Fe Blend Cooking Creme
  • 2  cups  shredded  Mexican blend cheese

Directions

  1. Preheat oven to 375 degrees.
  2. Spray a 8x8 glass baking dish with cooking spray.
  3. In a large bowl, combine potatoes, black beans, corn and cooking creme. Stir in half of cheese. Pour potato mixture into baking dish. Sprinkle with remaining cheese.
  4. Bake for 25-30 minutes, or until cheese is golden brown and bubbly.
  5. Remove from oven and serve.
  6. Recipe serves 4-6 and can be prepared in one hour.
