Southern Peach and Pork Skewers

Ingredients
- 1 1⁄2 lbs boneless pork shoulder, cut in 1 inch cubes
- 4 firm peaches, cut into eight chunks each
- 1 onion, cut into 1 inch chunks
- 1 teaspoon dried thyme
- 1 bay leaf, crushed
- 3 tablespoons Southern Comfort
- 2 tablespoons oil
- 16 slices bacon, cut in half
- salt and pepper
Directions
- Combine pork, peaches, onion, thyme, bay leaf, Southern Comfort and oil.
- Marinate for 1 hour.
- Wrap peach chunks in slices of bacon.
- Skewer pork, peaches and onion alternately.
- Grill 5 to 10 minutes basting occasionally with marinade.
