Southern Chicken Salad Casserole

I have not made this yet, but it sounds really good. From the church potluck supper cookbook.

Ready In: 1 hr

Serves: 10-12

Ingredients

  • 4  cups  diced  cooked chicken
  • 2  cups  condensed cream of chicken soup
  • 2  cups  diced celery
  • 4  tablespoons  minced onions
  • 2  cups  slivered almonds
  • 1  cup mayonnaise
  • 34 cup  chicken stock
  • 1  teaspoon salt
  • 12 teaspoon pepper
  • 4  tablespoons lemon juice
  • 6  hard-boiled eggs, chopped fine
  • 1  cup  buttery  cracker crumb, crushed fine

Directions

  1. Preheat oven to 350 degrees.
  2. Combine the above ingredients, except the cracker crumbs.
  3. Put into a 3-4 quart casserole.
  4. Cover with cracker crumbs.
  5. Bake at 350 degrees for 40 minutes.
  6. Serve hot.
