South-Of-The-Border Fish and Sweet Potato Chips on the Grill

Ingredients
- 16 ounces whiting fish fillets
- 1 lb sweet potato
- 1⁄2 cup bell pepper, sliced
- 1 tablespoon extra virgin olive oil (or other cooking oil, but I suggest olive oil)
- garlic salt
- onion powder
- salt
- black pepper
Directions
- Fish:.
- Spray grill rack with cooking spray, heat to 380°F.
- season fish fillets with 1 tsp onion powder, thyme, salt and pepper.
- cook fillets on grill, 4 mins per side; fish will flake easily with a fork when done.
- Sweet potatoes and bell peppers:.
- Cut sweet potatoes however you like to serve them (I suggest wedges), mix with bell peppers, toss 1 tbsp oil to coat, season with garlic salt, onion powder, salt and pepper.
- Pour seasoned sweet potatoes and bell peppers into a foil pan or foil, place on grill and cook for 30 mins, or until tender. Make sure to stir while cooking.
- Serve fish with chips, enjoy!
