South Beach Tomato Salsa

This is the salsa that goes with the Spinach Frittata in Phase 1.

Ingredients

• 4  plum tomatoes, seeded and chopped
• 2  scallions, minced
• 1  garlic clove, minced
• 2  tablespoons fresh cilantro, minced
• 1  tablespoon fresh lime juice
• 1⁄4 teaspoon salt
• 1⁄8 teaspoon fresh ground black pepper

Directions

1. In a large bowl, stir together the ingredients.
2. Serve fresh at room temperature.
