South African Cucumber Relish

Ingredients
- 3 medium cucumbers, peeled and seeded
- 1 teaspoon sea salt
- 1 tablespoon cider vinegar
- 1 garlic clove, finely minced
- 1 teaspoon jalapeno pepper, finely minced
Directions
- Grate the cucumbers on the large holes of a hand grater into a salad bowl.
- Sprinkle them with the salt and let them stand for 2 hours.
- Drain them in a colander, pressing out the liquid.
- Add the vinegar, garlic, and jalapeno pepper and mix well.
- Cover with plastic wrap and chill for at least 1 hour.
