  1. Combine sugar, sour cream, milk, corn syrup, and salt in a heavy saucepan and bring to a boil, stirring constantly.
  2. Then cover and cook 3 minutes without stirring.
  3. Remove cover and continue to cook without stirring until mixture reads 234 degrees F on candy thermometer.
  4. Pour into large mixing bowl.
  5. Let cool.
  6. Beat in butter and vanilla.
  7. Continue beating until fudge loses glossy appearance.
  8. Pour into 8x8-inch square buttered pan.
  9. Cool, and cut into squares.
