Sour Cherry Salsa

Yields: 2 Cups
Ingredients
- 3⁄4 lb sour cherry, chopped fresh (or frozen either way about 2.25 cups)
- 1 tablespoon sugar
- 3 tablespoons red onions, finely chopped
- 1 jalapeno chile, finely chopped fresh (including seeds)
- 2 tablespoons lime juice
- 1⁄4 cup cilantro, fresh chopped
- 1⁄2 teaspoon salt
Directions
- If using frozen, thaw and reserve juice for some other use.
- Mix cherries and sugar until dissolved.
- Stir in onion, jalapeno, lime, cilantro and salt.
- Let stand at room temp for 30 minutes to allow flavors to develop.
