Souper Simple Tortellini Soup

Ingredients
- 2 tablespoons butter
- 1⁄4 cup onion, chopped
- 1⁄2 cup celery, chopped
- 1⁄2 cup carrot, chopped
- 3 garlic cloves, minced
- 1 -2 chicken bouillon cube, depending on personal preference
- 1 (10 ounce) package chicken-filled tortellini or 1 (10 ounce) package cheese tortellini
- 6 cups water
- 1 tablespoon fresh parsley, chopped
- 1⁄2 teaspoon ground nutmeg
- 1⁄4 teaspoon pepper
- 1⁄4 cup parmesan cheese, grated (optional)
Directions
- Saute onion, celery, carrots, and garlic in butter over medium heat until crisp-tender in a large stock pot or dutch oven.
- Stir in water and boullion, and heat to boiling.
- Add tortellini, and reduce heat to medium low.
- Simmer 15-20 minutes or until tortellini are tender.
- Stir in parsley, nutmeg, pepper. Sprinkle each bowl with cheese for garnish.
