Souped up Split Pea Soup

I've never been a big split pea soup fan but felt it was something I should eat. So, in the interest of fixing healthy soups for my family and clearing out the pantry while I was at it - I put together this crock pot friendly soup that is mostly split pea. Show more

  1. put carrots, baby corn, onion, and pine nuts in the food processor and chop.
  2. put all ingredients except chicken broth in the crock pot.
  3. add 6 cups of the chicken broth.
  4. cook on high for 3 hours.
  5. turn down to low for another 2 hours and add the remaining 2 cups of chicken broth (if you like it thick or thinner adjust the broth to your preference).
